Brinata means early morning frost in Italian. It is our favorite sheep's milk brie. Made from a complex production process with only the purest sheep's milk, Brinata has an edible, delicate white mold rind and a soft, smooth texture. It tastes like an exquisite brie, but with a slight sheepy tang and a bit more moisture.
